That pretty much sums it up. I was invited to a cookie exchange party and have to make 10 dozen cookies, so I want to find something good, but not too time consuming! Thanks!

Martha Stewart's got a great recipe finder that will focus only on cookies (in case you're interested in browsing).

Otherwise, I enjoy her oatmeal cookies. They're extremely popular among the recipients.

Oatmeal Cookies

Ingredients:
1 cup packed light brown sugar
1 cup granulated sugar
½ pound (2 sticks) unsalted butter, room temperature
2 large eggs, room temperature
1 teaspoon pure vanilla extract
3 cups rolled oats
1 cup plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ cup wheat germ
12 ounces good-quality chocolate, chopped into chunks, or
1 ½ cups golden raisins, or
10 ounces toffee pieces

Directions:
1. Heat oven to 350 degrees. Combine the brown sugar, granulated sugar, and butter in an electric mixer fitted with the paddle attachment. Starting with the mixer on low speed and increasing until it is on medium, beat until the mixture is creamy and fluffy, about 5 minutes. Add the eggs and the vanilla extract, then scrape the sides of the bowl with a rubber spatula, and mix to combine.
2. Combine the rolled oats, flour, baking soda, baking powder, and wheat germ in a large bowl, and stir to combine. Add the dry mixture to butter mixture, then mix on low speed just to combine, 10 to 15 seconds. Remove the bowl from mixer stand, and stir in your choice of chocolate chunks, golden raisins, or toffee pieces.
3. Line the baking pans with parchment paper. Use a large (2 ½ ounce) or small (1 ¼ ounce) ice-cream scoop to form balls of dough. Place the balls of dough about 4 inches apart on baking pans. Bake until golden and just set, about 18 minutes for large cookies and 14 minutes for small cookies. Remove from oven; let cool on pan 4 to 5 minutes before transferring to a cooling rack.

Coconut macaroons:

Beat 2 eggwhites w/one half teaspoon vanilla until soft peaks form, gradually add 2/3 cup sugar beating until stiff peaks form.
Fold in about 1 1/2 cups flaked coconut (1-2 bags).
Place by rounded teaspoons on greased cookie sheet. Bake in 325 oven for twenty minutes or until edges lightly brown.
Transfer to wire rack.
If you're feeling adventurous you can dip the bottoms in melted chocolate.
One batch makes about 30 cookies.

These are my mom's tried and true recipe - one recipe makes a ton of cookies, they are easily made ahead, and they were always the cookies that the teachers bought first for bake sales at school.

4 sticks butter, softened
2 cups sugar
4 cups flour
1/2 tsp baking powder
1/2 tsp salt
1 egg
1 tsp vanilla

Mix all the ingredients in a large bowl (I'm sure you can use a spoon or mixer, but I've always used my hands - it helps the butter mix in evenly). Roll dough into logs about 2 inches in diameter, and roll each up in wax paper. You will have 3-4 logs of dough. Put the dough logs in the fridge until they are firm (at least an hour), or you can freeze it (just make sure you thaw in the fridge before trying to slice and bake, or they will not slice well).

When you are ready to bake:
Preheat oven to 325. Unwrap a log of dough and slice 1/4 inch thick. Place them on an ungreased cookie sheet (I line it with foil or parchment paper, but you don't have to) about 1.5 inches apart. Bake for 10-15 minutes, until the edges are just going golden.

Let the cookies cool on the cookie sheet for 10 minutes to firm up, and then take them off. When they are completely cooled, seal them in airtight containers and they will stay good for a long while.

You can do all sorts of stuff to decorate these before you back - add a nut, candied cherry, whatever you think is pretty and will hold up to baking will work. You can also put in other extracts besides vanilla - I really like almond with a blanched almond pressed into the cookie.

The last time I made these, I lost count of how many dozens I had, but I had the oven on for at least a couple of hours. And the house smelled delicious :)

Yum! I LOVE butter cookies. This sounds like some I have made in the past, but I don't roll and chill the dough. Instead, I put it in a cookie press and make wreaths, trees, stars, etc. This is what my mom did when I was a kid. When I was little, we used red food coloring on some dough, green on some, and left some natural colored. I made some a few years ago and didn't use food coloring on any, but did use colored sprinkles on some. So good! I should make some time to bake some soon. :)
