meatless meals & salmon recipes

Looking to reduce our meat consumption (environmental, economic and health reasons) and would love recipes, links or cookbook suggestions. On a related note, would also love your favorite salmon recipes.

I've got one of the Moosewood cookbooks (Moosewood at Home, I think it is) and it's great. I've found the recipes to be simple and tasty. Plus it's got a glossary in back describing the different ingredients, which is very useful if you're not familiar with all the different vegetables and grains they use. I've heard good things about their other cookbooks, too.
