I'm curious if there are people who make exactly the right amount of dinner for their family, with no leftovers. How do you do it? Can you gauge how much food a new recipe will make or guess how much of a new food your family will eat? There are days when I have so much leftovers from the week that I have to throw stuff out. :( I'm willing to eat leftovers for lunch (and DD eats dinner leftovers the next day for lunch at daycare), but I really prefer not to do it myself every day. :)

ETA something that was accidentally deleted. My computer has problems! :)

I try to double recipes, and then freeze entire meals in single-serving portions. That way, I can eat them whenever I'm no longer tired of them!

Like the PP, I often make a double or triple batch and then freeze leftovers in portions before we grow tired of it. Of course this was a learning experience and it took me awhile to figure it out, during which we tossed a lot of leftovers. :( But it does make it so much easier to make extra and then have leftovers 2 weeks later when we're not tired of it. :)
