View Full Version : Anyone Have a Favorite Carrot Cake (or Banana Cake) Recipe?

I can't decide on whether to bake a carrot cake or banana cake for DD's birthday. Does anyone have a good recipe for either a carrot or banana cake (or both :-)) that you can share?

I have an awesome carrot cake recipe! I have been thinking about making it just for fun, it's that good, and you can turn it into cupcakes really easily, and if you don't ice them then they're muffins!

I've posted it before...let me see if I can find the thread...

For an actual cake, I use two 9-inch cake pans, and bake for 45-50 minutes at the same temp, until a toothpick comes out clean. I have only made a big cake 2x, though, I prefer the cupcakes.

I just want to second that this recipe is FANTASTIC. I came across it two weeks ago while searching for something to make for my DD's birthday party at our little class and made these. They are so yummy and were even better the next day. They even freeze well (yes, I already had some of the ones I froze). This recipe is a keeper!

Any tips on how to grate 6 cups of carrots easily? I would love to try this recipe. Any help is appreciated.

Haven't made it yet, but I was just planning on grating the carrots in the food processor.

Me neither. I dislike grating more than I dislike cleaning the food processor.

I do it in the food processor, but I've also done it by hand...it goes surprisingly quickly, and even though I hate grating (and the orange hands), this cake is worth it. Trust me.
