I want to get a small one for Father's Day but have never purchased one before. Do you keep them in the fridge or freezer? If you keep in in the freezer do they last a long time? TIA!!!

It probably depends on what brand of ice cream cake it is. However, since there's ice cream in there, definately keep it in the freezer no matter what the brand (just as you would with ice cream sans cake). I would think the best thing to do would be to ask at the place where you purchase the ice cream cake, since your answer probably varies by brand. (Also, get some tips from them on how to avoid freezer burn while you're at it.)

This isn't too helpful, but I think they last a pretty long time. Are you trying to figure out if it'll still be good on Sunday if you buy it w/i the next couple of days or something else? I don't think you'd have a problem at all if you went ahead and picked it up soon. I sort of think that being frozen will help it keep longer. I think we're stuck getting a cookie "cake" for Father's Day. I'm all about ice cream cakes, but he likes giant cookies! LOL

I forgot to say it, but YES, definitely keep it in the freezer. I think that you generally pull it out of the freezer for about 10 minutes before you're ready to cut it. If you don't, it's almost impossible to cut through.

I usually pick mine up the day before and put in the freezer. Just like PP, I take it out about 10 min before we eat it and use a warmed up knife to slice it.
As for lasting...our leftovers last in the freezer as long as it takes us to eat it!

I got DD a Dairy Queen ice cream cake for her party yesterday. We bought it Friday and served it on Sunday. I am sure you can keep it a couple of days if you need to.
JMO but the ice cream cakes that actually have cake in them are not very good. Our family prefers the ones that are all ice cream with fudge and crunchies and the like added in.

Oh and keeping it in the freezer is a definite. Also use a large (and as PP said warm) dry knife to cut it it will be easier for you then.

I respectfully disagree with your assessment of ice cream cakes that have actual cake inside!:P I always feel cheated when I see an ice cream cake and then find out it's strictly ice cream. It seems wrong somehow! Either way, though, they're yummy! :)
