Can you describe how much more stable it is compared to the bags with out the stabilizer?

All the bags come with stabilizer, the Windsor just comes with two layers which makes it more than 1/4 inch thick.

what does the stabilizer do for it? For those of you who have bags without it, do they stand up well enough?

I'm trying to decide whether it is worth the extra money for the extra stabilizer, especially since I already got a backpack and shouldn't even be ordering a second bag. :)

Won't it stand up with all the stuff in it anyway, if I pack it full?

I don't have the Windsor, I have the 3 Peas which is a little bit smaller, but not much, and it stands up really well.

I would think it'd stand up pretty well if you packed it full but Kim's the expert. I know what you mean about not wanting to spend the extra $15. I wanted a Windsor for my sister to use as a tote bag but decided to go with a 3 Peas for her instead...I was being greedy and wanted to order another bag for myself so didn't want to spend that extra $15 on her bag :)
