i'd like to find some healthy recipes and hoping there's a good web site. stuff like:

- whole wheat pancakes/waffles
- healthier muffins (i plan to freeze and take out when i need)
- healthy homemade snacks.

any suggestions?

Hi Tammy -

I know you asked for websites, not recipes, but thought I'd share a personal favourite in this department. Forgive me if it trespasses on a food sensitivity with Lauren - I've lost track of who eats what in this mob!

Anyway, these muffins are fast, easy, tasty, moist, easy to chew, nutritious, and very reliable for a duffer baker like myself. I throw bananas into the freezer when they get too brown, and pull out three of them whenever I want to whip these up. The freezing converts some of the bananas' starches into sugars naturally, and cuts down on the amount of added sugar I need to use. When L is older, or for adults, you can add half a cup of walnuts if you like.

Banana Muffins

3 medium bananas - frozen, thawed, peeled and mashed with a fork - should come out close to one cup
1 cup low-fat plain yogurt
1/4 cup brown sugar
1/4 cup canola oil (it's a heart-healthy fat)
2/3 cup unbleached white flour
1 cup whole wheat flour
2 tsp baking soda

Preheat oven to 400F.

Mix bananas, yogurt, sugar and oil.

Mix flours and soda.

Add dry mixture to wet mixture, mix until just barely combined.

Spoon into muffin cups, bake 15-18 minutes. Very yummy!

www.wholesomebabyfood.com is a good site. I don't think they have a recipe for whole wheat pancakes, but it should give you lots of other ideas.

Here's a recipe for whole wheat waffles- I haven't tried them yet, but here it is:

Whole Wheat Waffles

2 1/4 cups whole wheat flour
4 teaspoons baking powder
3/4 teaspoon salt
1 1/2 tablespoon sugar
2 beaten eggs
2 1/4 cups milk
1/4 cup vegetable oil

Pour mixture on waffle griddle.

Here's a pancake one too:

Whole wheat pancakes

1 1/4 cups whole wheat flour
2 teaspoons baking powder
1 Tablespoon sugar
1/2 teaspoon salt
1 egg
1 cup milk
2 tablespoons vegetable oil

Mix ingredients and pour onto griddle in pancake sized puddles.

And a muffin one:

Whole Wheat Muffins

2 cups whole wheat flour
1/2 teaspoon salt
3 teaspoons baking powder
2 beaten eggs
1 cup milk
3 tablespoons brown sugar
2 tablespoons melted butter or margarine

Stir together the dry ingredients. In a separate bowl, stir together the liquid ingredients. Combine both sets of ingredients, mixing only until the dry ingredients are moist. Bake in greased or papered muffin tins for 20 minutes at 375 degrees.

IF you have a Whole Foods near by they have a wonderful bulk foods section, and they have pancake and waffle mix that's all organic. I'm pretty sure that it's whole wheat too.

oh i only wish. i LOVE whole foods and miss it terribly from san diego. we would definitely have to make that big drive if we wanted to go to whole foods. next time we're in raleigh, we'll definitely go.

It's just down the road a little ways from Crabtree Valley Mall, so you can definitely stop by there when you come next time. It's still a little ways from where we live so I have to make a monthly trip.

good to know! i think i want to hit southpark (or whatever that other mall is called) next time, but i know there's a few whole foods up there. i would give my eye teeth for a whole foods closer. LOVE that place.
