Does anyone have a recipe?

When I was pg with DS, we got Ralph's Italian Ice all the time in NYC...I'd give anything to find the same out here, but there doesn't seem to be any. I'll buy an ice cream maker if I have to...

Looks like it is 4 parts boiling water, one part sugar and 3 parts juice pulp or flavor. I have an ice cream machine and will check the booklet to see if there is an icee recipe.

I am SOOOO jealous!!!

What I wouldn't give for a lemon italian ice *sigh.* DH wants to go into business during tourist season, making and selling our own...I'm sure it'd sell like hotcakes should we ever go there...

It never even OCCURRED to me to make my own ices, I thought you *had* to buy them, like cotton candy and funnel cakes ;)

Here's a recipe that I found and I may try today. It sounds pretty easy.

LEMON ITALIAN ICE

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 c Water
1 1/4 c Sugar
1 1/2 ts Grated lemon peel
3/4 c Lemon juice

Combine water, sugar and lemon peel in medium saucepan. Bring to a boil on medium heat, stirring constantly. remove from heat and allow to cool.Pour mixture into canister of ice cream maker. stir in
lemon juice. Freeze according to manufacturer's directions. Makes 1 quart.

Here's one that you don't need an ice cream maker for, I am thinking this one will be less sweet & more lemony and "authentic":


Lemon Ice

1 Cup sugar
4 Cups boiling water
3/4 Cup fresh lemon juice
1 Tablespoon grated rind...do not grate the pith (white) or it will be bitter.

Dissolve the sugar in the water, cool

Then add lemon juice and grated rind

Freeze in a tray, stirring the crystals about every now and then lest the ice freeze rock solid. When it's frozen scoop into little pleated cups and enjoy!

I happen to have several lemons in the house...and DH left the house mad at me this morning. Finding homemade lemon ice at home just may soften him up...now let's see if I can remember to make it, and to not eat it all :9

Dang it, I need to dig up my recipe for lemon ice. It actually has vodka in it to keep softer, which of course we could skip, but it was very good. It's actually similar to Jo's second recipe, though. The only thing is that the last time I made it, I ran out of lemons and used limes. Yummy!!! So yes, if you add the vodka (and it doesn't take much), you don't have to stir it.

Okay, for those of you preggo people, here's some way to use up all those yummy strawberries and lemons:

Strawberry Lemonade
1 basket of strawberries
2-3 lemons juiced
1 cup of sugar

Place all ingredients in a blender to blend
Pour into a regular size pitcher
Add water and mix (do not fill to the top or it will be too watery)


Or this one from Epicurious:

STRAWBERRY ITALIAN ICE
Can be prepared in 45 minutes or less.

1 pint fresh strawberries, trimmed
1/4 cup sugar
2 teaspoons fresh lemon juice
2 cups ice cubes (about 11)

Put a 9- or 10-inch metal cake pan in the freezer. In a blender blend the strawberries, the sugar, and the lemon juice until the mixture is smooth and the sugar is dissolved. Add the ice cubes, blend the mixture until it is smooth, and pour it into the cold pan. Freeze the mixture for 30 to 40 minutes, or until it is frozen around the edge but still soft in the center, stir the strawberry ice, mashing the frozen parts with a fork, and spoon it into 2 bowls.

And yes, leave out the vodka. ;)

The second recipe is in the freezer as we speak...

...how long does this take to freeze???
