Someone posted about wanting a hummus recipe and I have a great one so wanted to share it.

This is from the America's Test Kitchen family cook book.

Makes about 2 C
Prep Time 10 minutes
Total Time 40 Minutes (including 30 minute chilling time)

Tahini is usually found in the international aisle of the supermarket. It is crucial for the flavor and texture of hummus. Be sure to stir the tahini throughly before measuring it.

1 (15.5 oz) can chickpeas, rinsed
1/4 C tahini
1/4 C EVOO (extra virgin olive oil)
1/4 C water
1 garlic clove, minced
3/4 tsp salt
pinch of cayanne pepper
3 Tbsp fresh lemon juice

mmm...I love hummus. One problem I've had with various recipes I've tried is feeling that the taste of the raw garlic was too much.
I found a recipe in the magazine "Fine Cooking" that suggested slicing the garlic thinly, then simmering it for a few minutes in a little olive oil (with a little cumin, I think). Awesome.
That is the only way I make it, now.
