I <heart> gazpacho. Anyone have a good recipe? My FIL gave me his recipe, which supposedly garners raves, but I found it to be too liquidy (lots of tomato juice, not a lot of "stuff"), and it relied on tabasco for all its heat, which I found to be sort of one-note. Anyone have a great recipe they'd care to share? It's warming up, and a cool, spicy gazpacho is just the thing on a hot afternoon.

I have a gazpacho recipe that we love, but (obviously :) it's at home. I will post it tonight or bring it with me and post it tomorrow.

Here's the recipe. It's from Barefoot Contessa. It's really good. It doesn't have Tabasco or anything spicy per se, but it has the peppers and the vinegar adds a nice tanginess. I'm sure you could add Tabasco with no problems.

2 hothouse cucumbers, halved and seeded, but not peeled
3 red bell peppers, cored and seeded
5 medium tomatoes or 8 plum tomatoes
2 red onions, peeled
6 garlic cloves
46 oz. tomato juice (6 cups)
1/2 c. white wine vinegar
1/2 c. good olive oil
1 T. kosher salt
1 1/2 t. black pepper

Roughly chop cucumbers, peppers, tomatoes, and onion into 1" cubes. Put each separately into food processor and pulse until coarsely chopped. Do not overprocess.

After each vegetable is processed, combine in a large bowl and add garlic, tomato juice, vinegar, olive oil, salt, and pepper. Mix well and chill before serving. The longer it sits, the more the flavors develop. Serves 8-10.
