Yum! Would love a crab cake recipe! Have you ever had
the crab cakes at Del Frisco? Delicious! I *forced* myself
to eat the whole crab cake and I was stuffed. :)

Anyone have a great recipe??

I didn't reply to this one earlier because it seemed like cheating but this is one we LOVE and it's easy and cheap :) It comes from a friend of mine who is attending the cullinary institute in NY... and as thus is somewhat vague. I need more mayo to make it stick together.

Crab Cakes
1 can crab meat
1 can pink salmon
season to taste with pepper and seasoning salt about
2-3 tsps (may vary on how you like yours)
old bay, mccormick seasoning salt, blk pepper
1-2 tbsp on mayonaise (you want enough to moisten)
30 crackers crushed ... may use more or less depending on how you want it to come out

mix all ingredients together in a big bowl
roll into balls and flatten, lightly cover with flour
pan fry on each side until golden brown and serve

This is my personal recipe that I made up myself:

Green Chile Crab cakes

1 cup of roasted diced New Mexico green chiles (Hatch green chiles by Old El Paso in the Mexican food section at the grocery store - buy at least 4 of those small cans and drain the water)
2 cups of breadcrumbs
1 cup of panko (japanese bread crumbs)
1/2 tsp of salt
1/2 tsp of pepper (or freshly ground pepper)
1/2 cup of mayonnaise
1 egg or egg beaters equivalent to one egg
1/2 cup of diced onions optional
1 lb of crabmeat pick over and remove shell bits

Mix all items together in a bowl except the panko. Note depending on the texture of the cakes you may need to add more eggs or more breadcrumbs to get the texture just right and sticky.

Roll the crab mixure into cakes (small or larger ones). Roll the cakes into the Panko breadcrumbs. Fry the cakes in Olive Oil on a skillet till a nice golden toasty color.

Enjoy w/salsa and sliced avocados.
