View Full Version : I made a giant lasagna... now what do I do?

I made a lasagna for the first time ever today. I followed the recipe, except DH requested that it be a cheese only lasagna, so I skipped the beef. It is ridiculous in size. It has 2 jars of baking pasta sauce, 2 lbs of ricotta, 1 lb of mozarella, some parmesan, and 1/2 lb of cheddar. Not to mention the pasta. I called the 1-800 number on the side of the barilla box and it said if you are going to freeze it, do it BEFORE you bake it. Ummm... it was in the oven already.

Now what do I do with it??? It's just DH and I eating it. I'm thinking of having the neighbors over for dinner today.

I always invite people over when we're having lasagna for this very reason! Dh takes lasagna to work for lunch for the next couple days, too!

I make the same thing every other week or so. We finish it easily. No freezing necessary, but you can certainly freeze after baking. have your neighbors over if you need to; everybody loves lasagna.

I've never put cheddar in a lasagna. How does it taste?

I have frozen cooked lasagna before. The top may dry a bit upon reheating, but it'll be okay!

I hear you on the giant lasagnas. My little family LOVES them (meat, traditional lasagnas)that I buy the bulk stuff at Costco and make them three at a time (freezing two before baking). So when I am out of town, they get a home-cooked meal or two in :):)

Yep, last time I made lasagna, I made a double batch and froze one of them. I put it in one of those food saver bags and when I reheat, I'll probably reheat with a cover so that the moisture remains. It's actually a pretty "wet" recipe, so I'm guessing it'll be fine. I might even add a little extra cheese on top for good measure. :9

It was delicious. Oh, so cheesy and melty and yummy. DH and I had a third of it :9 and then went for a 4 mile walk. The neighbors declined due to lactose intolerance. I am still stuffed, but it was soooooooooo good.

we LOVE lasagne, and i always think of making a double batch to freeze, but here's my Q, do you cook your noodles before assembly? my fave lasagne recipe calls for un-cooked noodles and i wondered if either or made a difference.

You can freeze it - cut it into serving size pieces first. I'd cover each piece with a damp paper towel when you reheat it to try to minimize the edges of the pasta drying out.

well, I've been buying those smooth (no ridges) lasagna noodles from Barilla and I think the instructions say you don't have to bake them. Personally, if I don't have to, that's awesome because it's far less work! :P

Yep, those Barilla flat no-boils are the greatest! I've done no-boil with the ridged-ones too; you just add extra water and bake, but the flat Barilla ones are even easier (and smaller, so easier to cut).

I love no-boil lasagna. Boiling first doubles the prep time and has burned my hands several times.

FTR, I made matzoh lasagna for Passover and it was delish! We love our lasagna in these parts. My personal favorite is with sauteed mushrooms and spinach, no meat.

Oops-- wanted to add that you can make your no-boil lasagna, freeze it, and bake it later. I'd probably add a little extra water when you're ready to bake.

I've frozen cooked lasagna before. After it's cooled, I cut individual servings, wrap them in plastic, then in foil. Make sure you label them, otherwise you'll have mystery blocks of foil 2 weeks later. :)

ok, so assemble w/no-boil noodles, freeze, THEN bake? plus add a little xtra water at baking time?

Just budding in to say that we make this every Passover as well. My receipe is pretty simple. Make the lasagna as usual, but in place of noodles take a full sheet of matzah and hold it quickly under running water. I turn the sink faucet on and start at one end of the matzah and keep moving it through the water stream. Lay it into the bottom of the baking pan and continue layering with ricotta, spinach, mushrooms, zucchini, tomato sauce, cheese, etc. I usually end up with 2 8x8" baking pans worth of lasagna since the matza fits perfectly in those trays.
