Anyone have a tried and tested recipe for healthy muffins. I made an oatbran one but they were a little too healthy, I liked them but DH said they were like cardboard! I want to make something healthy for snack for DDs preschool, we take turns to provide snacks, so I thought muffins would be nice.

These might be too healthy, too, but I love them! If you have a favorite quick bread recipe, you could make it into muffins.

Multigrain Muffins
from Moosewood Cooks at Home
Makes 12 muffins

1 egg
1/4 cup vegetable oil
1 cup buttermilk
1/3 cup brown sugar
1/2 cup oats
1 cup unbleached white flour
1 cup whole wheat flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder

Preheat the oven to 400°F.
Lightly spray muffin tins with cooking spray.
Mix the dry ingredients.
Add the wet ingredients and stir until well blended.
Spoon the batter into the muffin tins.
Bake for 20 minutes. Cool for 5 minutes and remove from the tins.

My notes:
-If you don't have fresh buttermilk, you can use powdered buttermilk and water (use amounts on canister). Add the powder to the dry ingredients and the water to the wet ingredients.
-I always make these in foil muffin cups, since I don't have a nice muffin tin.
-They freeze really well!

These are great! We've made them for years (LOVE that book). One other note on buttermilk is you can use any kind of regular milk (skim, low fat, whole) and add 1 TBSP vinegar to 1 cup milk and let stand for 5 minutes...buttermilk! (works as a baking substitute anyway).

We use the Muffin Madness recipe in there all the time because it's so easy and flexible - but not whole grain. Let me know if you want that one and I'll post it.
