Went Peach picking the other day and now I need to do something with them. Anyone have any peach recipes that they would like to share?

Have you seen Ball's new plastic Freezer Jam containers?

They come in packs of 5, have fill lines and stack perfectly. If you pick up a pack of those and one of their envelopes of freezer Jam pectin you can make the best jam ever:

Just crush up 4 cups of fruit, add sugar and pectin, stir for 3 minutes and ladle into jars. Amazingly easy and super tasty. I made 3 batches of strawberry, 1 batch of strawberry/raspberry, and 1 batch of peach/raspberry and my family is loving them all. To add the raspberries, I crush them only slightly and then add them in at the last minute before ladling so that the peach jam still looks "peach" but just has a slight pink hue and bigger pieces of raspberries mixed in.

My MIL makes a fresh peach pie that is absolutely wonderful. It is not baked, so you can really taste the peaches. People always rave about it and practically beg for the recipe. :)

I don't have the recipe in front of me, as she is kind enough to make it for us frequently during the summer, but this is basically it:

It is so good, especially when you have those really good homegrown-type peaches.

I made a great peach crisp with fresh peaches last week! Used the recipe from the ol' Betty Crocker cookbook. If you don't have it, let me know, and I'll post.

my mom made some great peach salsa this past weekend, just diced peaches and red onions. :)

That sounds great! Would you mind posting your MIL's recipe? I really like peaches, but I don't like cooked peaches; they smell and taste odd to me. Doesn't stop me from still eating cooked peach pie, though!

Sure--here is her exact recipe:

Crust:
1-1/2 c. flour
1/2 c. vegetable oil
1-1/2 T. sugar
2 T. milk
1 t. salt

Filling:
1 c. water
3 T. peach jello
1 c. sugar
Fresh peaches, peeled and sliced
2 T. cornstarch

Mix the flour, sugar, and salt for crust in a 9-inch pie plate. Add the oil and milk, mixing well. Press crust in bottom and sides of pan, and bake at 375 degrees for about 15 minutes.

For filling, mix water, sugar, and cornstarch; cook until clear. Add the Jello. Cool and pour over fruit which has been peeled and sliced and put in shell, about 1 inch layer. Refrigerate for several hours.


I think her crust is part of what makes it so good--it really complements the already-delish peaches, plus it is totally easy to make. Mmm--I think I may need to make one up myself tomorrow! :)
