I'm on a baking/domesticity kick. And I have quite a few rotting bananas. And walnuts. But I hate hate hate dry muffins...Any tips for MOIST banana-nut muffins? Thanks so much.

i have no idea, but LOVE banana nut muffins, so i'm ready for the recipes to start pouring in.... :)

I posted this in the Banana thread a couple weeks back. Well, I actually posted a variation, but here is the one you would like:


Banana Nut Muffins
2 very ripe bananas, mashed
1 egg
1/2 tsp vanilla
1 cube unsalted butter, melted
2/3 cup brown sugar
-
1 1/4c flour
1 tsp baking powder
1/4 tsp salt
1/3 cup chopped nuts

-Preheat oven to 375, line or grease 8 muffin cups.
-Whisk together first 5 ingredients in med bowl till combined well. Measure remaining ingredients into bowl (on top of banana mixture) and blend until flour is just moistened.
-Divide batter into muffin cups. Bake until muffins are puffed and golden, about 25 minutes.

Variations:
-For a healthier muffin, I double the recipe but use 1/2 white flour and 1/2 whole wheat flour.


I found (by accident) that in all banana-based recipes, I like to use only brown sugar. I think that it gives better flavor, color and moistness. I just replace it measure for measure and it always has worked for me in the past.

banana nut bread muffins
(got this allrecipes.com years ago)
1 C sugar
1 egg
2 C flour
1/2 tsp salt
1/2 C oil
2 or 3 very ripe bananas
1/4 C walnuts
1 tsp b.soda
Mix sugar, oil and egg until creamy and light yellow. Add bananas and nuts. Add flour, b.soda and salt. Stir until completely smooth. Spoon into muffin tins.Bake for 25-30 minutes, until toothpick poked in center comes out clean.

When I make these for my kids I use 1/2 white flour and 1/2 wheat flour/wheat germ.

Which recipe did you use? I have a ton of bananas left over from an event this morning and I can see my future on Wednesday evening involving baking something with bananas. I'm also looking for a good, moist recipe!

I used the first one posted, as the Barefoot Contessa one calls for coconut which I do not have at hand. Doubled the recipe too.
