View Full Version : Educate me about crock pots

I've never used a crock pot, so I have no clue. I love the idea of putting something on earlier in the day, and hey presto it's ready for dinner. It's just myself, DH and DS - 20 months. ANy leftovers will either be frozen for a later meal, or used the next day at lunch.
Any suggestions on brands, size, recipes etc.

Seriously, they're up on the latest and have all sorts of good ideas for recipes. I haven't used my crockpot in a couple weeks, but when I do, I often check their site for ideas.
The other thing is that if you have a dutch oven (I have a cast iron one now), you can do something similar (slow cook in the oven on a low temp).

This is cheap and awesome to eat. It is a variation on the Blue Owl Restaurant White Chicken Chile. Start the night before!
2 medium onions, chopped
1-2 tablespoons minced garlic (from jar)
2 (4 ounce) cans chopped mild green chilies
2 teaspoons ground cumin
1 1/2 teaspoons dried oregano, crumbled
1/4 teaspoon cayenne pepper
1(16 ounce) bag dried great northern beans
6 cups chicken stock or canned chicken broth
4 cups chopped cooked chicken (I use leftovers or just chop up raw frozen)
2 cups grated monterey jack cheese
1 cup sour cream
The night before
In a large bowl soak beans (overnight).
If you have time - saute the onions and garlic, you don't have to but it will taste a little better.
In the crockpot add all the ingredients except for the beans, cheese and sour cream and put in fridge.
The next morning rinse the beans and discard the water.
Add beans to the crockpot, mix well and turn crockpot on low
cook for at least six hours (8-12 is fine)
Garnish with sour cream and cheese!
