Okay, so I thought it must be possible to make my own baking mix. I love Trader Joe's multigrain mix. I found "A Better Baking Mix" recipe online. Well, the resulting pancakes are the WORST I've ever tasted. Leaden and flavorless. Anyone have a baking mix recipe that works?

My mom makes a whole wheat baking mix that she's used all my life. Let me see if I can find the recipe.

I just figured out that DH used the container of whole wheat flour instead of the container labelled "Baking Mix" when he made the pancakes this weekend. Sigh.

Here is the mix I grew up on:

7 cups white flour
3 cups wheat flour
6 Tablespoons baking powder
1 1/2 Tablespoons salt
1 1/2 teaspoons cream of tarter
1/2 cup sugar
2 cups butter or butter blend (half butter & half oil)

Cut butter into other ingredients until consistency of cornmeal. Store in refridgerator.

We also grew up using the butter blend I mentioned above. It makes for a nice spreadable consistency straight out of the fridge and cuts down on the saturated fat. Still tastes just like butter though. I personally like it much better than butter because it's easier to work with. Just soften the butter first and put it in a blender. Add the oil and blend until mixed. It will be very liquidy but once you put it in the fridge it will firm up nicely. HTH!

Sorry i know this is a slightly dumb question but what do you then use the mix for? you keep it in the fridge for pancakes? the only mix we ever used in my family was bisquic which is gross and we do not use it anymore.

Well, we make waffle and pancakes with it by adding an egg and milk to the batter. We make biscuits with it by adding milk. And we make cinnamon, blueberry, apple cinnamon etc rolls by adding milk, rolling out the dough, buttering the dough, adding filling, rolling up the dough and slicing into rolls. Basically anything you can do with bisquick you can do with this. If you want more specifics, let me know.

Thanks! I've made pancakes and biscuits now from the baking mix instead of the flour and they both turned out pretty well. The pancakes were actually really good. (I added chocolate chips. :-) ) The biscuits were a little dry--maybe I overcooked them a little. Anyway, here's the link in case anyone is interested.
