Lookin for good rice dishes

One of my fav things to make for a quick dinner is rice with corn. Basically I just cook some rice and add a bit of butter, salt and frozen corn. Mmm... Yummy! But, I'm looking to expand my recipe box of rice dishes and so far I'm at a loss. I'm looking for some good, basic rice dishes that can serve as either a side dish or as a main dish. TIA!

i often throw some baby carrots into the pot when i'm making rice.

I love onion rice. I add a packet of lipton's french onion soup to the pot. I dissolve the soup mix in the water and add the rice. Then cook as I normally would. Oh, I do at a bit more water than usual, but not much. Once it's done, I add a little bit of parmesan cheese and cover again to let it melt.
