I've read that many people like sheet pans from restaurant supply stores, but I don't have one my my area. Does anyone have experience with an online restaurant supply store? What guage should I look for?

I was also wondering if anyone has used the Williams-Sonoma Professional sheet pans with aluminum-coated steel. What would be the advantages (if any) over an aluminum pan from the restaurant supply store?

I bought the WS cookie sheets you mentioned for my friends' wedding last month. They are very substansial and the quality seems high. Sorry that I have no experience with the restaurant supply ones. I do think the WS ones are good but there may be as good ones out there for less.

I love my Silpat sheets, btw. If you don't have one I would add one to whatever sheet you end up with.

Thank you! I just ordered the WS cookie sheets per your recommendation. A silpat sheet is next on my list!

I'm a fan of baking stones myself. I'll never use a metal cookie sheet again!

Do you actually bake on it? I am having a hard time visualizing that. We keep our baking stone in the oven all the time and preheat the oven with it in (per the directions of our stone). Even if I did preheat the oven w/o it in there wouldn't it be heavy, hot and cumbersome when I took it out? Maybe it's a different product? I'd love to hear how you use yours' for baking on. I mainly use mine directly only for pizza and a few other things. Otherwise I use it primarily for evening the oven temperature.

I'd love to know what kind/s of stones you use. DH needs ideas for Hanukkah gifts! ;)

The stoneware from The Pampered Chef is the best. It's 100% gray clay with no fillers. They heat evenly, everything comes off nice and brown and crips (no dark, hard bottoms), and they are easy to clean and maintain. They become naturally non-stick over time and just get better with age. :)
