here is one we love from Weight Watchers

Unfried Chicken
Servings: 6
POINTS(c)/serving: 6
Source: "Simply Delicious" WW cookbook

3 1/2-pound chicken cut into 8 pieces, skin removed
1/4 cup reduced-fat mayonnaise
1 tsp Dijon mustard
2 tsp fresh lemon zest
1/2 tsp salt
3-4 drops hot pepper sauce (Tabasco)-optional
3/4 cup cornflake crumbs
(if you can't find cornflake crumbs, make your own by placing regular cornflakes in a zip lock bag; finely crush with a rolling pin. You'll need about 1 1/4 C of the flakes to make 3/4 C crumbs)

Preheat oven to 375; coat shallow cookie sheet with cooking spray. Rinse chicken pieces and pat dry. Mix mayo, mustard, lemon zest, salt and hot pepper sauce in a medium bowl. coat each piece of chicken in this mixture, toss with cornflake crumbs in a ziploc bag to coat. Place on cooking sheet and spray liberally with cooking spray. Cook uncovered until golden brown (about 45 minutes) or until cooked through. Do not turn, do not cover.
