View Full Version : I need a potluck dish

DD's school is having a potluck from 10.30-noon and I signed up to make an entree. But what to make? The kids will mainly want bread, rice and noodles so the teacher suggested I make something for the parents. I guess this will be lunch for most people. Another person who signed up to make an entree is bringing mini pigs in a blanket, but to me that's not really an entree. Maybe some sort of casserole? I haven't had much experience with potlucks so I don't have a lot of ideas.

what about a quiche, or an egg casserole? You can also make a pasta primavera or a simple pasta with sauteed broccoli and garlic in olive oil, this way you have the noodles so the kids might eat it!

Mac and cheese (the real thing)
Lasagna
Chili
Pasta or rice main dish
Salad with grilled chicken/salmon

Have you ever made a 'strata'? It takes bread, eggs sausage onions, you let it sit overnight and pop it in the oven the next day. It is super easy, and very quiche like without having to fuss with pastry crust. I'll bet you can google or cooks.com a recipe.
