Preferrably ones that freeze well. I really like freezer cooking. We have lots of main dishes frozen, but pretty much only cheesy potatoes and mashed potatoes for sides. I need something more interesting.

If not freezable, then something quick with easy ingredients would work!

thanks.

I just made a creamed spinach side dish for Christmas that was really really good- and pretty easy. I guess it would freeze well since you can buy frozen creamed spinach. Actually, when she made it on the show she did the first few steps and then put it in the fridge until she was ready to bake it off for her dinner.

It's from the Barefoot Contessa on Food Network.

Even my aunt, who doesn't eat spinach, really liked it!

mmmmmmm...Thanks so much for this recipe. I made it and froze half of it for later. We all loved it including the 2 1/2 yo and 1 yo baby!

I'm going to try it tomorrow. Do I have to use Kosher salt or can I use regular?

I'm sure regular is fine. Maybe not quite as much since regular salt adds the *salty* flavor and Kosher salt is supposedly just supposed to enhance the flavor- or something like that.

I bought Kosher salt. I'm sure it'll last until I die.

But, I apparently won't ever make this recipe. I want to. I have been to 4 stores looking for Gruyere cheese. Everywhere is out since Christmas. Crazy. I give up.

I just used some Mozzerella instead. I think Gruyere is a kind of swiss, so you can shred some swiss if you can't find it. My mom suggested I keep it "more Italian" for our Christmas Eve dinner, so I sprinkled Mozz cheese on it and it was very tasty!

Good luck!
