On a whim, I bought a panini press over the weekend. I figure it will help with quick after work dinners. DD really doesn't eat much of anything, so I'm usually just cooking for one, and I hate cold sandwiches. I'm at a loss for sandwich ideas though. I bought a bunch of sandwich fixings but can only come up with meat, cheese, lettuce, tomato.

Can someone help me get creative with this?

We love our Panini - we use it for Quesadillas, sandwiches...grilled veggies.

My favorite combos are:

French bread, tomato, mozzarella and basil
Whole grain bread, ham, cheddar and dijon mustard
Tortilla, brie and mango (so good with a glass of chardonnay :) )
Tortilla, grilled onion/peppers and jack cheese
French bread, chicken, pesto and mozzarella

I always use the panini to grill the chicken for Chicken Salad:

Chutney Chicken Salad

4 bone-in skin-on chicken breasts
Coarse salt and ground pepper
1/3 cup sour cream
3 tablespoons mayonnaise
3 tablespoons Major Grey’s chutney
1 tablespoon honey mustard
2 scallions, thinly sliced
1/2 cup raisins

1. Season chicken breasts generously with salt and pepper; place on hot Panini and cook 7-10 minutes. Let chicken rest until cool enough to handle, chop into large chunks.
2. In a large bowl, whisk together sour cream, mayonnaise, chutney, and mustard.
3. Add chicken, scallions, and raisins; season with salt and pepper and stir to combine.

Your DD might like ham, cheese and apple - my DS loves French bread with chocolate chips or nutella!

I really like it, easy to clean, cooks evenly and heats up fast.

I bought it at Sams Club a while back for around $60. I've also seen them at Tuesday Morning.

A George Foreman grill makes a great panini press in a pinch. :)

I got this one based on a recommendation from another board and the great reviews from Amazon.

The top plate is floating so it adjusts for thick sandwiches. You can even do different height settings
for the top plate, which allows you to do open face melts and reheat leftover pizza.

I've used it twice yesterday and for dinner today and love it! Even DH was impressed,
and he normally rolls his eyes at my small appliance purchases.

I got it at Macy's because I didn't have the patience to wait for Amazon delivery. It's
normally $69 and starting today, it's on sale for $59.
