View Full Version : Good appetizer sub for seared Ahi?

I'm planning on making a nice dinner for Valentines. I'm using a menu I learned at a demo dinner, which includes a stewed beef shank with pasta, watermelon and arugula salad, and seared ahi tuna on julienned veggies. Because I'm preggo I want to sub the tuna with something else. Does anyone have any suggestions for something that would go well with beef and pasta, that is pretty easy and for 2?

How about pan-seared scallops? They are fine for pregnancy and go well with beef and pasta.
This is what I'm making for V-day - you can cook the scallops this way, just ignore the rest of the recipe:

You basically lightly salt the scallops and then cook for a few minutes on each side until done. Use cooking spray on a non-stick skillet.

Ooooo! Yum! I love scallops. Actually I could do my original recipe and use scallops instead of the tuna! Thanks!
