My one year old likes pancakes but my recipes makes so much batter. Can I make all the pancakes and freeze them? Maybein press and seal? Do they taste okay defrosted?

Yes. I used to do that all the time. I would defrost them in the microwave.

You'll have to figure out exactly how long to "cook" them for. Too long and they get rock hard; too short and they're not heated through. I think I used to do 45 seconds or so.

I often make double and triple batches of pancakes from scratch on the weekends. I freeze the excess and heat them up for ds.

I usually nuke for 30-60 seconds, then finish them off in the toaster so they're not so soggy.

I always freeze leftover pancakes and serve them throughout the week. I let them cool completely, then I "flash freeze" them on a tray. Once frozen, I put them all in a plastic freezer bag. This method prevents them from getting icy or sticking together. Also, like deb, I always defrost them a little in the microwave and then pop them in the toaster oven for a few minutes. Microwaving alone makes them too soggy, whereas toasting alone make them hot & crispy on the outside but cold in the middle.

We freeze our extras all the time.
When it's time to eat them, just put them in the toaster oven frozed to toast and they're completely ready - just like the frozen ones you get from the grocery store.
