View Full Version : anyone have a healthy Oatmeal breakfast cookie recipe?

my cholesterol is borderline high, but i hate eating mushy oatmeal. i was wondering if anyone had a healthy breakfast cookie or bar recipe--so i could get the benefits of eating oatmeal without the MUSH and without a bunch of sugar.

i've seen the oatmeal bars at the grocery, but they look very sugary (and delicious..).

these are pretty healthy... as far as cookies go. you could eliminate the peanut butter chips to make them even healthier.



Peanut Butter Treats

Combine:
1 beaten egg
¾ cup cooking oil
1 cup honey
¼ cup water
1 tsp salt (or less, can be too salty)
1 tsp vanilla
(sometimes I add ¾ tsp maple flavoring)

Combine then add to above mixture:
3 cups quick cooking rolled oats (or chop up old fashion oats in the blender)
1 cup whole wheat flour
¾ cup wheat germ

Stir in:
1½ cups peanut butter chips (substitute ½ cup p.b. chips with chocolate chips is good!)
½ cup sunflower seeds
(sometimes I add ½ cup+ flax seed)

These cookies will not rise or change shape while cooking so make them big and kind of flatten them on the cookie sheet (with a damp hand) using about ¼ cup dough. Cook for 15-20 minutes at 350 degrees, take them out when the edges just barely start to brown.

Not a recipe but I LOVE the oatmeal crisp cereal from General Mills (my favorite is the raisin flavor). Quaker oats also has a toasted oatmeal, but the store I shop at doesn't cary it

Here is a bar recipe that was passed on to me by my SIL. We've made them several times and they're very good. We substitue sucanat for the brown sugar and leave out the raisins. I think (DH usually makes them) we also have used whole wheat flour, or at least some whole wheat flour in place of the all-purpose flour.
