I am looking for a cookbook that has some basic, simple recipes in it. Casseroles, etc that I can fix with not a lot of prep time. Anyone have suggestions?

Church cookbooks. Seriously.

They are usually full of family friendly, tried and true, easy to prepare recipes.

How about Don't Panic Dinner's in the Freezer. I think the prep on these meals is pretty simple and all are freezable.
So since you're looking for simple recipes, having something in the freezer is even easier than making it again, right?

my latest cookbook find is "The Cake Mix Doctor"

In the past month or so, I've made about 3 or 4 recipes from it and they were all really good. All the recipes start with a boxed cake mix!

Thanks for the suggestions. My mom said she had a bunch of church cookbooks that I can have so I am getting those this weekend, great idea!

I also ordered the cake doctor from Amazon and added the freezer one to my wish list!

I just made a chocolate chip cake recipe from the Cake Mix Doctor book and it was AMAZING!!!!

Chocolate Kahlua Cake

Cake:
• Vegetable oil spray for misting the pan
• Flour for dusting the pan
• 1 package (18.25 oz) plain devil’s food cake mix
• 1 package (5.9 oz) chocolate instant pudding mix
• ¾ C Kahlua
• ½ C water
• ½ C vegetable oil
• 4 large eggs

Glaze:
• 1 C confectioners’ sugar, sifted
• ¼ C Kahlua

1. preheat oven to 350. Lightly mist a 12-cup Bundt pan with spray, then dust with flour. Shake out the excess flour. Set the pan aside.

2. Place the cake mix, pudding mix, Kahlua, water, oil and eggs in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat for 2 to 3 minutes more, scraping the sides down again if needed. The batter should look thick and smooth. Pour the batter into the prepared pan, smoothing it out with the spatula. Place the pan in the over.

3. Bake the cake until it springs back when lightly pressed with your finger and a toothpick inserted into the center comes out clean, 45 to 47 minutes. Remove the pan from the oven and place it on a wire rack to cool for 20 minutes. Run a long, sharp knife around the edge of the cake and invert it on a serving platter.

4. Prepare the glaze. Place the sugar and Kahlua in a small mixing bowl and stir until well combined. Spoon the glaze over the top of the warm cake, allowing it to drizzle down the sides and into the center of the cake. Allow the cake to cool completely before slicing.

*store the cake, covered in plastic wrap or under a glass dome, at room temp for up to 4 days or in the refrigerator for up to 1 week. Or freeze it, wrapped in aluminum foil, for up to 6 months. Thaw the cake overnight on the counter before serving.
