View Full Version : anyone have some good recipes for baking with Splenda?

My dad is diabetic and has a TERRIBLE sweet tooth. Now that my mom is passed away, he lives alone and I think he has a terrible time stopping himself from munching. I see him every few weeks and would like to take him some desserts because he loves homemade desserts (it was my mom's specialty).

Admittedly, I haven't done much searching for cookbooks or recipes- I'm starting with you guys.

Do any of you have any good cake, cookies, sweetbread or other dessert recipes using a sugar substitute?

I just bought a book called Diabetic Dream Desserts at Tuesday Morning for $3.99. It has all types of desserts in there. It is by Sandra Woodruff. I just read through it and it looks awesome and you can use Splenda in every recipe if you wish. She also looks for ways to cut the refined stuff like white flour etc., by using oat flour and whole wheat flour in partial substitutions. I haven't made anything yet because I have gestational diabetes and my specialist said no goodies of any kind until after baby. My Mom is type 2 and I am planning on sharing the recipes with her.
