View Full Version : Easy & relatively healthy banana bread recipes?

I bought a huge bunch of bananas at Costco yesterday & I'm sure they'll go bad before we eat them all. I'd love see if anyone has a good recipe for banana bread or muffins or something along those lines. At least that way I won't be worried that we're wasting bananas, plus I'm sure my girls would love it. :)

It was a big hit at school snacktime! I used the tiny frozen blueberries (sometimes sold as wild blueberries), and used half whole wheat flour.

you can throw over ripe bananas in the freezer and use them in bread later, too.

Banana Snack Cake
From May/ June 2004 Quick Cooking

1 2/3 cups all- purpose flour
1 teaspoon baking soda
1 cup packed brown sugar
½ cup water
1/3 cup mashed ripe banana (about 1 small)
1/3 cup vegetable oil
½ teaspoon vanilla extract
Confectioners’ sugar


In a large bowl, combine flour and baking soda. In another bowl, whisk the brown sugar, water, banana, oil and vanilla. Stir into dry ingredients just until moistened. Transfer to a greased 8 inch square baking dish. Bake at 350 degrees for 30 to 35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with Confectioners’ sugar. Cut into squares. Yield: 9 servings. Note: This recipe does not use eggs.
