I am making a cake for dd's b-day which is on Tuesday afternoon. I would like to decorate it on monday night. How far in advance can I bake the cake? It will not fit in my freezer so how should I keep it so it does not get stale? Thanks!

Hmm, you can probably bake it Sunday night or Monday morning, just once it's cooled completely, cover it. As long as it's whole and covered it should be fine. Saturday might be pushing it.

I presume this is a box mix?

Yes, I am using a box mix. I was going to do it from scratch but there is some serious decorating to do so I thought I would do a mix and doctor it a bit.

Wrap in plastic, then in foil and it should be fine. Just make sure it is thoroughly cooled first so you don't get condensation/extra moisture, then be sure there is no air getting in to get it stale.

The book The Cake Mix Doctor has some great recipes for doctoring up mixes!

That is what I am using. I think I will use the sour cream cake recipe which should stay pretty moist for a while.

I've made that cake and it is very moist. Her chocolate cake is to die for as well. No one believes it is a packet cake. Good luck with the decorating.
