Can I use songs I've purchased from iTunes to burn a CD to play in my van?

Yes, you can.
ETA: Do you need to know how, or were you just wondering if it was legal? It is legal, and easy to do. Make a playlist of the songs, and click "Burn to disc" at the lower right corner.

there's work arounds but it's a PITA.
I just want all of my purchased music on one CD!

When your playlist contains purchased music, I believe you can only burn it 10 times. But the workaround is to change the playlist by adding or deleting a track.

It's only true for a particular playlist. So, you can't purchase a CD from the music store and then burn eleven copies of it. (Generally not a problem for legal use!)
