View Full Version : Any tricks to Gluten free baking?

Today is my mom's birthday. A few years ago she discovered she has Celiac disease and therefore avoids all wheat products. She loves carrot cake and I have a great recipe. I went to Whole Foods and bought gluten free flour. I was just going to replace wheat flour with the gluten free flour. Is there anything else I should do?

google bette hagman and see if you can find any tips- or check the library. she has a line of books that my celiac friends highly recommend. and they bake!

Depends on what flour you bought, honestly. Some gf flours really need more oil, and some just don't take well to cake baking, imho.

In case you get stuck, here's a quick fix: WF also has a Pam's White Cake GF mix that turns into carrot cake very easily (recipe on the package).
