Or are they like potatoes and have lots of nutrients in the skin?

In AL we always just roasted our sweet potatoes and them ate them whole with butter (everything is better with butter, right?!). I always figured the skin was good for you...if anything, it's added fiber!

I peel them if I'm cooking them in a casserole or stew or mashing them. I don't if I'm baking them -- we eat them like a baked potato.
I love yams!

I think it's ok either way, but I like to steam them in my rice cooker in big chunks. Then the peel just almost falls off on its own....it's the lazy way of peeling!
