I made these the other night and they were really good and about as healthy as pancakes can be. It is adapted from one I found online. They are filling and sweet enough that you don't need syrup (just a nice pat of butter would be nice!).

1.5 cups white whole wheat flour
2 scoops protein powder (optional - if you omit add an addt'l 1/3 cup of ww flour; I used Optimum Nutrition vanilla protein powder)
3 tablespoons sweetener (I used natural sugar, but any sweetener would work - maple syrup would be good too)
4 tsp baking powder
2 eggs (I used XL, but I would bet regular large would be fine)
1.5 cups milk
3 tablespoons melted butter
1 tablespoon vanilla extract
2 scoops flaxmeal (optional)
1 cup meusli (this is just a guess - I just poured some in until it looked about right. I used the familia brand I got at WF, but any meusli would work)

Combine dry ingredients except sweetener together in large bowl. Separately combine eggs, milk, butter, vanilla, sweetener. Mix together and use immediately. I used 1/4 cup measure for each pancake. They freeze well and reheat easily in microwave or toaster oven. Enjoy!
