I usually make a yummy salad with my CSA beets but I feel like the goat cheese is what makes it and dairy is out for now. I'll probably wind up roasting them on the grill, but there has to be something more exciting out there...

My MIL serves them sliced with slices of orange and fresh mozzarella and a bit of dressing. I never ate beets before having them this way and have to say I really enjoy them now.

ETA: Sorry - just saw dairy is out for now - try them just with the orange slices - it's delish!!!

I have a good beet salad recipe that I'm personally addicted to and it's dairy free

-Roast beets in oven (approx. 1 hr at 350 F covered with a little water in the pan)
-Peel beets and chop or slice, whatever you prefer
-1 vidalia onion, sliced (you can dice instead if you like smaller pieces)

Dressing:
1/3 c cider vinegar
1/4 c olive oil
1/3 c honey
salt, pepper and dried thyme

Mix & chill

I have some beets in the fridge now from my dad's garden - I think I'll roast them tonight!

Thanks, these both sound really yummy and I have all the other stuff on hand to do either one. I'll let you know how it goes!
