Cozumel Excursions? Grand Caymen? Key West?

Any suggestions on things that are MUST SEE in Cozumel, Grand Caymen or Key West? We're going on a Cruise and those are the stops!

Key West - we just got off and started walking. It's pretty compact. There is a butterfly conservatory that you can walk to that is probably fun for kids (we were there without the kids). Gotta take everyone's picture at the southernmost point of the U.S. too!

Cozumel - we went to a private beach club that is owned by a Canadian guy and discussed all the time on cruisecritic.com - they have lots of chairs and umbrellas, and ask only for you to spend around $10pp on food and drinks to use the property. There is a big trampoline thing out in the water that looked fun. They also have showers if you want to clean up before heading back. We had to take a taxi there - maybe a 15 minute ride? It was empty the day we were there.
