OT- Can trim back my crazy growing out of control Stars and Moon watermelon vine?

My watermelon vine is sooo aggressive--I found it today with it's tentacles wrapped around my "sweet minding-it's own-business in a different bed" painted eggplants.

So can I cut the vines that don't have a melon off--or am I risking the whole plant?

Also it said to plant two in each mound--so we have two--can I pull up one or do I need it to get fruit.

yes you can trim it down or redirect. You have to or they take over. I think it also makes the watermellons bigger

ETA I don't know about the plant 2-usually you get rid of the one not doing as well and I did plant 1 pumpkin last year so I know they don't need 2
