Apple Dumplings

It's apple dumpling time around here so I suppose it's about time I learned how to make them. Anyone have a wonderful recipe?
I could make PW's http://thepioneerwoman.com/cooking/2008/02/apple_dumplings/ but holy moley that's alot of butter (and Mt.Dew..hmmm, not diggin it).

Southern Living has two apple dumpling recipes this month. I haven't tried either one, yet. One is a quick recipe (http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1924776), and one is a classic recipe (http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1924763). I tried making apple dumplings years ago, but I wasn't pleased with the results. I was trying to duplicate one I had gotten from an apple festival. Maybe I'll give it another shot this year. If I do, I know I'll add more cinnamon to the recipe. In my opinion, 1/2 teaspoon just isn't enough.
