Our car ('09 Escape) only has the anchors in the back cargo area, and the manual says only to use them for front facing. Since there isn't anything made for anchoring it on the floor, what are my options?

Use the D-ring that came with the carseat and find a place on the floor near the front seats. Maybe a post that bolts the seat to the floor or something similar. Use the D-ring to make a tether point there. You might have to pry up some plastic to find a place.

Unless it's nicer than our 06 Escape, (and by nicer, I mean covered in plastic to make it look pretty and sleek, lol, like Kris noted about prying up plastic), then you should be able to use the front seat's back leg... the britax manual has a little page/drawing of how to tie the tether connector strap (that extra strap hooked to your tether in the pocket on the back of the cover) around a leg so that you can tether forward and down to the floor :)
