Thanksgiving! What are you make in advance recipes?

My mom has always been about make-ahead recipes for the holidays so that she can spend the holiday with the family instead of in the kitchen (her house is set up so that the kitchen is a few rooms away from the living and family rooms). However, her staples are things like bean salad, potato salad, and cole slaw which she can make the day before, but not this far in advance. Then she just bakes the meat and some rolls on the holiday.

I never considered freezing things, but that could work so much better (especially because I'm not a big fan of a mostly cold meal on a cold November or December day). I'll be watching for ideas!
