stuffed mushrooms w/ costco spinach dip???

I don't know the Costco one (though ask me how familiar I am with the hot artichoke one lol) but I don't see why not. I'd probably top it with some grated parmesan.

yes, I mean the jalapeno, artichoke and spinach dip....yum!

Yum. I'd just do it like regular old stuffed mushrooms, a little butter or white wine and butter in the bottom of the dish to keep them from drying out and parmesan on top. Don't see why that wouldn't work. I wouldn't overstuff too much as it could become runny.
