I'm debating going to our MNO cookie swap. I have no idea why since I don't cook much and I don't need a bunch of extra cookies, but hey.

My friend makes these great frosted gingerbread cookies. For Halloween she makes pumpkins, for the holidays it's gingerbread men. I have her recipe and she suggested that I use a simple shape rather than a gingerbread man (I'm thinking a circle :) But if I frost it and decorate it it might look like a fun ornament, right?).

So, my question is: has anyone ever made cookies in a molded pan? The recipe is a rolled dough recipe and expects you to be using a cookie cutter. How (or do) you modify it to go in a pan? Or would it be more of a gingerbread (or cake) dough that you would use?
