I just made some spanikopita but have a bunch of leftover phyllo dough. what can I make with the rest of it that's not too complicated?

I'd make layers of butter mixed with sugar and cinnamon--you can't get easier than that. If you want to pretend to be nutritious, caramelize some apples, throw in some raisins and nuts, and wrap the mix in the layers.

Wrap a wedge or wheel of brie cheese in the phyllo and bake until the dough is brown and flaky and the cheese is melting inside. Serve with a mild fruit chutney or tart fruit jam. Heaven on earth.

I don't have the recipe with me (and I'm not sure exactly where it is), but we've done one where we layered ham and cheese on top of a sheet of phyllo dough, then rolled it up like a jelly roll and baked it. It was very tasty.

i like it simple with sugar and cinnamon or cheese.

Giada's phyllo croutons are amazing! I highly recommend it with her Italian vegetable soup!
