If you have a favorite quick recipe, can I get it? Kids want pancakes and I've lost my recipe. Thanks!

I use Betty Crocker

1 beaten egg
3/4c milk
1c flour
1 T sugar
2 T oil
3 t baking powder

ETA - forgot the dash of salt

I use the one from the Joy of Cooking - I think it's 1.5 cups milk, 2 eggs, 3 Tbsp. melted butter and some optional vanilla, mix together and then pour over 2 cups flour, 3 Tbsp. sugar + 1.5 tsp. baking powder. Whisk together.

Good Old Fashioned pancakes. We use recipe this weekly.. .just had them for dinner last night a matter of fact.

I've given up on making pancakes from scratch. Sadly, they just do not turn out as well as our Trader Joe's Multigrain Baking and Pancake Mix. So...whenever we head down to TJ's I just stock up on however many boxes I think that we'd use before the expiration date. Thankfully, I've been able to make 2 trips a year and keep up on our stash. :) The Mix is awesome!

Um, my answer is also the back of the TJ's mix box! They have been deemed DHs fav pancakes. (I still try to health them up a bit by adding flax.)

Have any of you ever froze these pancakes? Looking for something that I can make bulk, and reheat in the morning...my husband and I have to be on the road for work by about 5:30am, and don't get home until 7pm (both work medical field).

I've frozen every type of pancake I've ever made--mix, from scratch, etc. I put wax paper between each pancake and stack in a ziploc bag. Take one out, pop it in the toaster--boom, you're done. FABULOUS!

Silly question but does whole wheat flour substitute in the same ratio? Do you do anything different..I read you need to sift it a few times to make it less dense? I just bought some to experiment with but tips would be great! My kids love pancakes and this recipe sounds perfect.

Nope, no sifting, just the exact same amount of whole wheat flour as white. LOVE it!

Melissa I tried that recipe today and WOW. They were delicious! DD didn't even put syrup on them. I'm sold-yum! :bowdown: Thanks for the link.
