Why can't I re-freeze?

Making my own baby food here. Book says I can't use frozen peaches/green beans/whatever, cook them and then freeze in ice cube trays, but doesn't say why. Does anyone know why? Frozen fruit out of season would be easier for me to use.

Also, FWIW we had lima beans for supper (DH & I), and I offered a mashed up one to DS (8 mo old). He loved it. Lima beans!?!?! :confused: My least favorite veggie as a child. DS hates peas and avocados. Whatever...
