What should I put into a quiche that I am making for a vegetarian friend? Are there any fillings that people love? I admit that if it doesn't have ham or bacon in it then I take a pass usually. :)

Mushroom, spinach and cheese sounds pretty good to me. I've not tried to make it myself, but I'd love for someone to make it for me and I'm not vegetarian either!

Corner Bakery has a really yummy spinach, feta and tomato fritata. Yum!!

love spinach feta and tomato

or zucchini, roasted peppers, carmelized onions and feta

my MIL makes one with onions avocado and tomato and not sure what kind of cheese
