Uneven oven temp or expired leaveners ... assuming it's a scratch cake and not from a mix?

Not done all the way? Did the toothpick come out clean when you tested the middle?

Sometimes over-mixing can cause that problem as well.

From Hershey's site:
If a homemade cake fell (the center of the cake sinks), the following problems may have occurred:
The cake was under-baked - the oven temperature was too low and/or the baking time was too short.
The liquid was over or under measured.
The pan was too small - the batter was too deep.
The cake was moved or jarred before it was sufficiently baked.
Old or expired baking powder was used.
A wooden pick or cake tester was inserted into the cake before it was sufficiently set.

wow thanks for the help! It's funny because this is my only cake that falls (no matter what size pan I use) and I don't think I do anything diff. than my other cakes. go figure:)

give a glance at cakewrecks.blogspot.com and rejoice that yours is lovely and likely spelled correctly! those things...some of them are scary.
