I thought I would post this yummy crock pot peanut chicken recipe

I cut the chicken into chunks. at the end, I whisked in more broth (to make more sauce) and thickened the sauce with cornstarch. I served with steamed broccoli and crushed peanuts and red pepper flakes all over brown rice. (i didn't cook with the red pepper because dd wouldn't eat it if it's too spicy--DH said the red pepper was a MUST).

anyway, it was easy and super delish, so i thought i'd share!

This sounds a lot like a stir fry recipe that I used to make when I had more time to prepare dinner/we ate later.....in other words, before DD. It was yummy and DH loved it. Now, I use the crockpot more, and am always interested in new/different recipes. I'm going to try this out this weekend. Betcha it would be yummy with some strips of red bell pepper scattered over the top of the chicken.
