ETA- I have to agree with some of the people who commented regarding the chicken..that chicken had to be pumped full of something to get it that large. I would go for an organic chicken and buy 2 if I had to get to seven pounds even it it put me a little over budget. Also, some may say that 5 days is too long for chicken leftovers..perhaps. One can still make the last two recipes earlier in the rotation and freeze them for later in the week (ex-the soup would reheat nicely)

Nice!

It should read more like 17 servings, not meals, I guess. So for us that would be like 5 meals (kids don't eat as much), but still would be a great deal.

This brings me to my question. If you buy a rotisserie chicken at Costco..how long would you continue to eat it before tossing? Is 5 days too long?

First night we just do the chicken and have rice and a veggie.
I usually skip a night and then do a pot pie or quesadillas.

If we still have anything left I might do chicken salad for myself but then it's not getting heated and I worry I'll get sick so it usually get's tossed or I make stock out of it.
