I'm trying to make a white cake with a layer of lemon curd in between. I can't get my lemon curd to set/ thicken. I've tried adding cornstarch and that hasn't helped either.

I used egg yolks, sugar, butter and lemon juice and followed the directions.

Anyone have any ideas for what I can do to make it thicken?

I may make it again or take the curd and mix it with whipping cream/dream whip to make a lighter, lemony filling.

We are having angel food cake with lemon curd mixed with dream whip and strawberries on the side tomorrow. Yum!

Wish I would have read that first!

However, it does seem to be thickening up some now that it is in the fridge. If it doesn't get the right consistency, I think I will take your advice about using dream whip or something like that to mix with it.
